Ingredients
- 2 tsp. garlic powder
- 2 tsp. dried oregano
- 1 tsp. kosher salt
- 1/2 tsp. ground black pepper
- 1/2 tsp. red pepper flakes (optional)
- 2 Tbs. olive oil
- 12 oz. (5 to 6 links) fully cooked Italian-style chicken sausage, sliced into ⅛-inch-thick rounds
- 1 1/2 cups uncooked jasmine rice, rinsed
- 4 cups low-sodium chicken broth
- 3 cups roughly chopped baby spinach (about 4 oz.)
- Juice of 1 lemon
- 1 Tbs. coconut aminos (or reduced-sodium soy sauce)
Instructions
In small bowl, mix garlic powder, oregano, salt, black pepper and red pepper flakes (if using). Set aside. Heat oil in large lidded sauté pan or Dutch oven over medium heat. Add sausage and cook until browned and crisp, 2–3 min. per side. Transfer to plate.
In same pan, add rice. Cook, stirring occasionally, until golden and fragrant, about 1 min. Stir in spices and broth
and bring to boil over medium-high heat. Reduce heat to low, cover and cook until liquid is absorbed and rice is fluffy, 14–16 min., stirring halfway through to prevent sticking.
Add spinach, lemon juice and coconut aminos and stir until
spinach is wilted, about 1 min. Turn off heat, return sausage to the pan and mix well. Spoon into four bowls and serve.
