- 2 1/2 Tbs. olive oil
- 2 tsp. dried basil
- 2 tsp. dried oregano
- 2 tsp. garlic powder
- 1 1/2 tsp. kosher salt
- 1 tsp. chili powder
- 1/2 tsp. ground black pepper
- 4 (4 oz.) skinless salmon fillets
- 2 1/2 cups low-sodium vegetable or low-sodium chicken broth
- 1 cup gluten-free or regular orzo
- 1 (8 oz.) block feta cheese
- 1 pint cherry tomatoes, halved (about 11⁄2 cups)
- 1/2 cup pitted Kalamata olives
- 1 1/2 cups roughly chopped baby spinach (about 2 oz.)
- Juice of 1⁄2 lemon
Instructions
Heat oven to 400°F . In a 9 ×13-inch baking dish, whisk together oil, basil, oregano, garlic powder, salt, chili powder and black pepper. Pat salmon dry and place in baking dish. Swirl fish to coat with spiced oil. Transfer to plate.
Mix broth and orzo in baking dish. Set feta block in the center of dish and surround with cherry tomatoes and olives. Bake until orzo is al dente and tomatoes are softened, 23–25 min
Stir in spinach and lemon juice, breaking up feta and incorporating it
into orzo as you stir. Arrange fish over orzo. Bake until salmon is opaque and easily flakes with a fork, 9–11 min. Divide orzo among four plates and top each with a piece of salmon.
